About Tapas Brindisa
Since the very early years of Brindisa, Monika Linton has travelled all over Spain in search of traditional cheese makers, bean growers and ham curers. The best of these products are available to professional buyers across the country and at Brindisa shops in Exmouth & Borough markets, but it has also always been Monika’s ambition to put Brindisa foods on a plate with a glass of fine wine.
Brindisa is the key supplier and has given its name and its passion for Spanish food to the tapas bar. This specialist knowledge of local Spanish producers means that Tapas Brindisa is able to source all these ingredients – cheeses, charcuterie and store cupboard provisions – from local producers all over Spain, while head chef Jose Manuel Pizarro turns them into an imaginative range of tapas.
The bar's unique Jamoneria, or traditional ham carving corner, means that delicious fine ham is available to take home.

José Manual Pizarro – spent his early years working in a number of Spain’s Michelin starred restaurants and has been cooking in London for 5 years. Before the restaurant opened, Pizarro worked within Brindisa and so has a full understanding of the suppliers and the workings of the business. Pizarro is head chef and cooks exceptional tapas with Brindisa as his store cupboard. He is supported by a fantastic team, including sous chef Josep Carbonell who has spent 8 years cooking Spanish menus in London.
Jonathan Jeffery is the restaurant manager with experience at award winning gastro pubs and in locations across the world. Jonathan also worked within Brindisa before the restaurant opened, meaning he knows and understands the products on the menu. Jonathan ensures that Tapas Brindisa has a friendly and informal atmosphere
