The cheeses we offer come from very diverse makers. Among them are several smaller dairies producing remarkably good and very individual cheeses.
Some are considered the best cheese within their D.O.P. demarcated area, such as Vicente Pastor Zamorano.
Among our most traditional cheeses is the iconic Manchego, a ewe’s milk cheese prized for its fine flavour. We are pleased to offer several Manchegos with different depths of flavour, according to length of cure.
