OLIVE OIL ROUGH MASH

Olive oil rough mash, a delicious makeover of the traditional mash.

ingredients

  • 700g potatoes, scrubbed with skin on
  • 100ml Arbequina olive oil
IN STOCK
  • 50ml whole milk
  • 2 spring onions, finely sliced
  • 1 garlic clove, finely grated
  • 1/2 tsp sea salt

METHOD

  1. Set steamer pan to boil.
  2. Cut potatoes into 1½ inch pieces, place in boiling steamer and steam until just tender (approx 12 - 15 minutes).
  3. Transfer potatoes to a large sauce pan and add the remaining ingredients.
  4. Mash until desired texture.
  5. Cover and keep warm until serving.
