For almost two decades our dried beans and pulses from Gredos have had a very successful history in our portfolio. Our original bean connoisseur of El Barco de Ávila, Julián Sánchez García, still selects the beans for us with the same precision as always.
The beans come from farmers in the Sierra de Gredos region in Ávila. This is very important to their quality, enjoying pure water, permeable soil with a high mineral content, high altitudes and a dry climate. They are harvested by hand in order to ensure the ripeness and dryness of each bean in the pod, which can vary by almost a month even within one plant, leading to a variety of qualities within the harvest if not well controlled. They are then hand selected for size and quality using traditional "crivas" sieves and packed and sealed at source, supplying the latest harvest only.
This results in beans that cook beautifully, doubling or even tripling in size, absorbing flavours and retaining their smooth texture.
