Less well known than the Manchego, these ewes´ milk cheeses come from Zamora and are made with milk from the Churra and Castellana sheep. Shepherding is more common in Zamora than in other areas of Castilla and this care is generally reflected in the quality and character of the milk. Sweet but meaty, hints of nuts and white chocolate.
