Location: Girona, Cataluña
Dauro is made at the Roda family's Empordà estate in Girona, where three different olive varieties are grown: Arbequina, Hojiblanca and Koroneiki.
This region has grown olives since Roman times and local conditions are well suited to it.
Benefitting from traditional knowledge and modern technology, company philosophy is that olive oil is a fruit juice, so each stage of the process concentrates on freshness and preservation of flavours. In fact, the mill equipment has been specially developed to retain temperature and texture and reduce oxidisation. This investment has resulted in a complex oil with wide and deep flavour tones from the different varieties.
It has quite intense aromas of light green salad leaves with apples and spicy lemons, delicate culinary herbs and a touch of rocket. Well balanced but light bitterness and pepper linger into a sweet and smooth after taste of green herbs.
