These are completely white, having been harvested before they reach the surface of the soil. At Navarrico, all the vegetables are picked, peeled and cleaned by hand. Harvesting requires well-trained pickers and has to be done in a limited time to catch them whilst they are at their best.

Navarran asparagus are a delicacy with subtle flavour and non-fibrous texture.
