Mandarin jelly

A light and refreshing jelly, this is the perfect dessert after a heavy and filling Christmas dinner.

Ingredients
1 jar Navarrico mandarin segments in syrup
2 tbsp white sugar
3 gelatine leaves
mint leaves (to serve)

Method

  1. Pour the clementine juice and segments (the whole jar) into a pan and turn up to the heat to warm through – but don’t let it boil. Stir in the sugar until dissolved before removing the pan from the heat.
  2. Put the gelatine leaves in a bowl of cold water for 1 minute until soft then squeeze out any excess water and add to the mixture. Stir until fully dissolved.
  3. Pour the mixture between 4 glasses, evenly dispersing the mandarin segments then place in the fridge to chill until set.
  4. Serve with fresh mint leaves, yoghurt, cream or ice cream.
