Ingredients
4 garlic cloves, peeled– buy the best garlic you can find
¼ tsp sea salt
2 egg yolks
125 ml Brindisa North & South olive oil
1 tsp / 5ml Valdespino sherry vinegar
1 tsp / 5ml lemon juice

Method

  1. Pound the garlic with the salt to a paste in a mortar and pestle.
  2. Place the garlic paste and egg yolks in a food processer and purée the garlic.
  3. Add the oil a little at a time until completely incorporated - scraping down the sides of the bowl as required - and process until the mixture has thickened.
  4. Add the sherry vinegar and lemon juice and mix to combine.
  5. Store in the refrigerator and allow to warm to room temperature before serving.
