Ingredients
2 large courgettes (washed, topped and tailed), cut to half their length
100g Salt cod spread
Brindisa Arbequina, cold pressed, tin, 1L
Add all to basket

Add in stock items to your basket

Method

  1. Gently simmer the 4 courgette pieces in salted water with, 2 teaspoons of olive oil, for 10 minutes. Drain and allow to cool.
  2. Scoop the soft flesh out of the courgette with a teaspoon, being careful not to break the courgettes. Mix the flesh with the salt cod spread.
  3. Fill the courgettes with the salt cod spread mixture and place under a hot grill until bubbling and golden.
  4. Garnish with chopped chives and serve.
