Traditional methods of pasturing, use of their own herds, and artisan small scale cheese production, make this blue from the remote Cantabrian village of Tresviso an award winner. Raw cow's milk - it has an unctuous texture and a buttery, salty, pungent taste.
Minimum weight 2.5kg. Each cheese is approximately 19cm in diameter and 9cm thick.
Storage and care
An average shelf life of 6 months. Keep refrigerated and use within a week of opening.
