From sustainably fished cod stocks in the North-East Atlantic, each fish is cured individually in sea salt to produce a dense, opalescent flesh. For classic croquetas, flake gently poached cod into mashed potato, and fry. Best when soaked for 24 hours (changing the water every 12 hours).
