Sustainably fished cod from sustainable sources in the North-East Atlantic. The loin, referring to the meatiest section of the fillet, is the most prized part of the fish – subtly flavoured with dense, moist flesh. Try placing the soaked Bacalao in a pan of gently warmed olive oil, garlic and dried chilli for a classic Basque pil pil. Best when soaked for 24 hours (changing the water every 12 hours).
