Morcilla

Black pudding is an essential part of ’La Matanza’, the season of slaughter for Spain’s pigs.Our Catalan version is soft and crumbly with hints of anis and the sweetness of onion, and our Morcilla de Burgos is made with rice and cumin, and firm enough to slice. Serve with mint, scrambled eggs or apple.
