Storage and care
The shelf life of a Monroyo ham on the bone is approximately two to three months. It must be stored in a dry area at room temp. After carving, the ham leg will keep for between four and six weeks. The carved surface of the ham should be covered with a large piece of removed fat and wrapped with a clean cloth to prevent the ham from drying out.
Hand carved ham is best served as soon as possible, but carved ham that hasn’t been consumed can be kept in the fridge for up to three days.
