Milk type: raw ewes' milk

This two month old cheese is made with Manchega raw ewes' milk and traditional rennet. It is washed once a week in sherry wine.
It has a semi-hard ivory texture with a golden-hay colour on the rind. The aroma is sweet and intense, reminiscent of Jerez (sherry) wine. The flavour is clean and elegant with a sweet and fruity finish.
Keep the cheese at room temperature for about half an hour before serving.
Perfect as an aperitif or enjoyed at the end of a meal. Serve with a glass of Oloroso sherry.
