    This two month old cheese is made with Manchega raw ewes' milk and traditional rennet. It is washed once a week in sherry wine.

    It has a semi-hard ivory texture with a golden-hay colour on the rind. The aroma is sweet and intense, reminiscent of Jerez (sherry) wine. The flavour is clean and elegant with a sweet and fruity finish.

    Keep the cheese at room temperature for about half an hour before serving.

    Perfect as an aperitif or enjoyed at the end of a meal. Serve with a glass of Oloroso sherry.

    Raw ewes' milk, lactic cultures, animal rennet, salt and lysozyme (egg). Rind: PX sherry (may contain sulphites). Edible rind.

    A small dairy that was established in 2008 by which makes an excellent artisan Manchego using the milk of their own herds of Manchega sheep.

    They also grow the crops that are used to feed the sheep during the winter months. A great example of a dairy that combines modern practices with traditional methods.
