Made with pasteurised organic Manchega sheeps' milk and traditional rennet. Aged for a minimum of two months.
A semi-cured sheeps' cheese with buttery, caramelly notes complemented by the aromatic notes of the mixed mountain herbs and a gentle sweetness from both the milk and the honey on the rind.
Ideal served with membrillo and a glass of dry sherry. Melts well, making it ideal as a cheese for stuffing piquillo peppers and mushrooms, for grilling, canapés and tapas.
Note: Leave at room temperature for at least one hour before eating.
