The spectacular limestone mountains of the Picos de Europa produce Spain's best blue cheeses, due to the abundance of pasture for animals and the cool and misty climate. Produced high in the mountains, this cheese is made with the unpasteurised milk of indigenous Parda cows.
The aromas are buttery and lightly spicy, whilst the paste, varying from creamy to crumbly, has plentiful blue; the flavour is strong and fruity but with a delicious balance of the cream and the blue.
