This is a very special recipe, created by Herpac themselves, intended to add value to their yellowfin tuna.

Barbate, in the province of Cádiz, where the company is based, is surrounded by the large natural pine forests of La Breña. This recipe combines the high quality of the pine nuts produced here with the flavour of PX from Jerez, in the same region, and raisins that give a more intense sweet flavour to the marinade.

As an antipasti, add some endives, peppery watercress or fresh baby spinach for freshness and a touch of bitterness to balance the sweetness of the marinade.
