It has a clean chestnut flavour aroma with a sweet, nutty taste and a fine texture.
Chestnut flour can be used for baking bread, pastry and cakes, as well as crepes and beignets. As it lacks gluten, it cannot be used on its own to produce stretchy doughs that you need to make pasta and bread, but it can be worked into these recipes by replacing 20% of normal flour with chestnut flour.
Chestnut flour can also be used to thicken sauces and make macaroons.
