Señorío Acorn Fed 100% Ibérico Ham, Hand-Carved, 100g
Intensely savoury, nutty sweetness, lingering flavour. Truffle notes. The essence of the dehesa.
This DOP Extremadura Ibérico de bellota ham is made from animals that have fattened on acorns for 10 -12 weeks on the local dehesa and have then been cured in Badajoz for more than 3 years.
The end result is a ham with an intense savoury aroma, a complex flavour that combines sweet nuttiness with a salty depth and has a long, lingering aftertaste.
Señorio de Montanera is a company, based in Badajoz, Extremadura, which was founded by a group of Ibérico pig breeders. Their aim was to create a business that would control each step of the process of producing Ibérico ham, from birth to the final product. They specialise in the production of DOP, acorn fed hams.

1605 Manchego, Mature, 230g

Our 1605 Manchego is made at the Sierra la Solana estate, an area of about 350 hectares, which includes vineyards, almond plantations and olive groves, 150km south of Madrid. Here you can find a traditional rustic Mediterranean vegetation as well as a harsh and extreme climatic environment, ideal for the native Manchega sheep to roam about. The result is clean, rich-tasting milk with a sweet and malted cereal finish which translate into an elegant, fruity, intense flavours with a long finish.
The aroma of this 5-month-matured Manchego is of butter and cereal. The paste is pale ivory, semi-hard and dense; the flavours are of sweet and rich sheep’s milk and raw almonds. It has a long, clean finish.

Luna Negra, Ash-coated (vegetarian), 250g
Mildly goaty, fresh. Raw almond notes. Soft yet firm. Ash coated. Like the best French chèvre.
Luna Negra is a goat's milk cheese, made using vegetarian coagulant. It is a lactic set cheese with vegetable ash, Penicillium candidum on the rind. The paste is white and compact, with clean, cellary and mushroomy aromas. The taste is a balance of mild goat's milk and raw almond, with a fresh, light and acidic finish.

Casas de Hualdo Organic Estate XV Olive Oil, 500ml

This wonderful olive oil is made using a combination of Arbequina and Cornicabra olive varieties. The blend provides a smooth, well-balanced flavour that sets it apart from other olive oils.
It is produced in small batches with organic olives grown at high altitudes (800m) in the Cuenca province, and harvested early in the season to capture peak flavour.
The oil presents vibrant notes of green apple, green tomato, endive, rocket, almond, and green fig. It has a delicate bitterness, noticeable spiciness, and intense fruity character.
It is ideal for salads, rice dishes, and sweet and savoury combinations.
