ORANGE & BLUE CHEESE SALAD

Orange & blue cheese salad: enjoy the delicious contrast between the blue cheese and the refreshing orange in this very simple salad.

ingredients

  • 3 Large oranges
  • 5 tbsp Nunez de Prado Unfiltered Extra Virgin Olive Oil

  • 4 tsp Unió Moscatel vinegar

  • 4 tsp orange juice (see below)
  • 8 Gordal olives, rinsed and very finely chopped

  • Pinch of salt
  • Several grinds of black pepper
  • 1 Romaine lettuce heart, leaves roughly torn
  • 8 Large chicory leaves, cross cut into quarters
  • 24 very thin red onion rings
  • 150g La Peral Blue cheese [select weight from basket]

METHOD

  1. Peel the oranges, section, then cut each section into three - retaining the juice.
  2. Whisk together the olive oil, vinegar, orange juice, chopped olives, salt and pepper.
  3. Divide the salad leaves and red onion rings between two plates.
  4. Crumble over the cheese and pour over the dressing.
