Lucas, our Wine and Cheese specialist, has put together a few pairings for you.

Fino and Manzanillas:

Refreshingly dry, crisp and pale in colour. Notes of green apple, sage and almonds. All accompanied by a saline and mineral character.

We recommend pairing this type of sherries with olives.

Amontillados:

Golden to mahogany in colour. Notes of hazelnut, spice and wood. On the palate is complex, persistent and lighter in structure.

This kind of sherry pairs perfectly with a washed rind cheese, like Ruperto.

Oloroso and Palo Cortado:

Intense amber colour. Rich, elegant, with great structure, smoothness and unctuosity.

We recommend pairing this type of sherries with a smoked meat, like the new Rooftop Smokehouse Pastrami.

Cream and Pedro Ximenez:

Golden to intense mahogany and even jet-black colours. Aromas vary from honey, floral, herbaceous and citrus to dried fruit, raising and figs. Although Cream is lighter, PX can be extraordinarily rich and sweet.

This kind of sherry pairs perfectly with a blue cheese, like Cabrales.
